Haunted Forest

My boys are working at the Haunted Forest in AF. They have been going to this place since they were little boys and can't wait to scare people. If you go, be sure to keep your eyes open for Sean or Alex.

10 years ago I:
Had a second grader, a Kindergartner, and a 10 month old baby. I lived off of 1600 North and my boys went to Windriver private school. I joined Lifestyles 2000 and began attending aerobics classes regularly.... I loved it! Scot worked in Magna for Packard Bell (he hated it) and commuted every day. I would drive up to meet him for lunch in SLC once a week. I hung out with lots of my neighborhood friends, as we all had kids the same age. Our family enjoyed going to our Lake Powell House boat and we also loved to visit other lakes in Utah. Life seemed easy back then.

5 things on today's "to do" list:
finish inventory in mom's shop
go to the bank
pick up from dance lessons
make dinner
help kids with homework

5 snacks I enjoy:
anything from a bakery or homemade
Diet coke, even though I'm not drinking it right now
protein bars...I love them!
popcorn
jamba juice

5 things I would do with 1 million dollars:
pay bills
invest
travel
buy a houseboat at Lake Powell
Put money away for kids college

I am...Cori
I miss...my darling preschool classes of the past and my sweet babies who are all grown.
I think...about what my family and I will be doing in 5, 10, 15 years.
I know....my testimony of Jesus Christ never waivers.
I want...my husband's company to have more success so he can relax a little bit.
I search...for answers in rearing my children, even though answers can be difficult to find.
I hate...contention!
I am scared...of losing my children to the evils of this world.
I fear...I am growing older and want to stay young.
I am always...busy with something or another!
I love...family outings, riding my bike, reading, going to sleep at night, and back rubs from Scot!
I feel...a lot of responsibility.
I don't always...follow through with disciplining (I'm to much of a softy and my kids know it).

I regret...nothing- regrets for me are quickly discarded, as we can do nothing but learn from our mistakes.

I lose...mostly my mind, having so much to do.

I read...often, but I have learned to keep it as a hobby and not take over my life-I'm really into History lately.

Caramel apples




Saturday afternoon my mom, my sister Jeni, and I went to Lynzi's (sister-in-law) baby shower for her twins. Scot was left with my kids and 2 of Jeni's little kids. He took them all shopping for ingredients to make caramel apples (crazy). I have no idea how he handled it, I can barely handle my girls in Wal-mart without buying 20 extra things we didn't need. Needless to say that I was pretty amazed when I saw their creations that night. He is such a fun dad!

While the girls were all at the photo shoot Saturday morning, Scot and my brother were in charge of watching Tucker (my nephew). They decided to take him on a bike ride up to Bridal Veil Falls. He rode behind Scot on Emma's tandem bike the whole way up, even in the rain.

Mmm....Salsa!


The very best thing about growing a garden is making homemade fresh salsa. For the past 10 years I collect baskets of tomatoes and follow my favorite salsa recipe by my friend, Rachele Foushee Beck. I have tweaked it to make it my own, but here it is:

2 large white onions, chopped
2 jalapeno, chopped and seeded (add to taste)
1 large bowl of fresh tomatoes, blanched and peeled
1/4 cup fresh cilantro, chopped (I use about 1/2 cup)
2 Tbs Italian seasoning
2 Tbs. lime juice, fresh squeezed
1 Tbs salt (to taste)
1/4 tsp pepper (to taste)

You can use a food processor or chop veggies by hand. I seriously put this on everything, eggs, chips, salad, fish (tilapia is the best), any Mexican dish, or I just eat it plain... I love it!

SCARIEST MOMENTS

My sister is calling out for scariest moments (they are kinda fun to read), so here are mine.

1. Scuba diving in Fiji with circling sharks... Yes they were stalking me, even though Scot to this day tries to convince me that they were just curious!
2. Caught in a Lake Powell downpour - if you've ever experienced this you'll know what I mean!!
3. Losing a child - This has unfortunately happened more than once!
4. Trying to raise teenagers - Wouldn't it be nice if we could just skip to when they are adults?
5. Stock market crash in 2000 - We lost a lot of money that year:(
6. Watching both of my Grandfathers die - One died of a heart attack at a BYU football game and the other died of Alzheimer's in his home this summer.
7. Being a teenager and pregnant!


Through all these scary and hard times, isn't it amazing that we pull through and become a little stronger?
